The grapes are picked, squeezed, centrifuged, and kept chilled at 28 degrees Fahrenheit as juice. The juice is fermented throughout the year at various intervals, keeping the wine light and delicate.
This method is employed by the Riboli family to preserve the blackberry, blueberry, and raspberry flavors. Along with the wine's inherent carbonation, alcohol is produced throughout the fermentation process. The wine is centrifuged and bottled once the desired sweetness has been obtained. The wine's natural sweetness and low pH are perfectly balanced by its natural acidity. It doesn't feel heavy or cloying.
