Definitely a piece of art, El Pintor Blanco. The quantity of cooked agave notes is quite unique. Selecting only mature blue agave plants from a single state in the lowlands, close to the tequila volcano, is the first step in the process. The food is cooked in a conventional brick oven. The agave is then split into two pieces and ground in two different ways: first in our traditional Tahona and then in a mechanized mill.
The cooked fluid is then fermented with fibers after cooking. The final step is a double distillation using cooper coil in stainless steel pots. It's 84 proof when finished, making it perfect for lovers of agave spirits and mixing drinks.
