The process of creating Blanco tequila is steeped in tradition and starts with a skilled El Jimador (farmer) who harvests the agave by hand. After removing the leaves, they cook the piñas (the hearts of the agave plants) to turn their natural fructans into fermentable sugars.

After the piñas are cooked, they're crushed to extract a sweet juice known as 'agua miel'. This is fermented for several days to weeks, depending on the distillery's process. Following fermentation, the liquid is distilled (or double-distilled) to refine it into the clear spirit known as Blanco tequila.
