Japanese whisky matured in Mizunara oak is called Kaiyo. The custom wood barrel selection is what makes this spirit so unique. Some of the most expensive woods are made of Mizunara oak.
Every spirit receives unique nuances from the wood's excellent character. But coopering with such a delicate wood grain is really difficult. Casks created specifically for aging Kaiyo whisky are made of Mizunara wood. These barrels are made from hand-selected, slow-growing trees that have had their wood air-seasoned.
