RumChata Drinks: What to Mix, Cocktails, Shots and Seasonal Flavors

Most bottles of RumChata show up unplanned. It was a gift, a party leftover, or a holiday pickup. Usually it's the Original. Sometimes it's a seasonal flavor that's only around for a few months. Either way, it ends up next to the coffee maker.

The easiest RumChata drinks use what's already in your kitchen: coffee, root beer, or a glass of ice. Cocktails and shots take one more bottle. The seasonal flavors each suit a particular drink, though the Original handles almost everything on its own.

A few mixers will curdle it, and those are easy to avoid once you know which ones.

Rumchata Horchata Con Ron by The Liquor Bros

What RumChata Tastes Like and Why It Mixes Easily

RumChata is a cream liqueur made with Caribbean rum, real dairy cream from Wisconsin, cinnamon, vanilla, and sugar. The name joins rum and horchata, the sweet rice-and-cinnamon drink common in Mexico, which is why the original bottle says "Horchata con Ron" on the label.

It pours sweet and creamy, with cinnamon up front and vanilla underneath. Next to Irish cream, it's thinner and spicier. At 13.75% ABV (27.5 proof), it's about as strong as a big red wine, a bit lighter than Irish cream and nowhere near the 40% of a bottle of rum.

The bottle already carries sweetness, cream, and spice, so a good RumChata drink rarely needs a long ingredient list.

One correction that comes up often: RumChata (sometimes written Rum Chata) contains real dairy, so it isn't dairy-free. Tom Maas created it in 2009, it's bottled in Pewaukee, Wisconsin, and E. & J. Gallo has owned the brand since 2021.

Easy Two-Ingredient RumChata Drinks

What to mix with RumChata mostly comes down to what's open in the fridge, and the same ratios hold for almost every two-ingredient build:

  • Shots: equal parts RumChata and the second spirit, 1:1.

  • Highballs and coffee: 1 part RumChata to 2 or 3 parts mixer.

  • Sipping: 2 to 3 oz poured over ice.

1) Coffee, Cold Brew and Espresso

RumChata stands in well for creamer and sugar in hot coffee, iced coffee, and cold brew. The cinnamon and warm spice soften a bitter roast, and the cream rounds out the body.

For cold brew, fill a highball glass with ice, pour in 2 oz RumChata, and top with 4 to 6 oz cold brew.

For hot coffee, stir 1.5 to 2 oz into a mug after the coffee is brewed. Don't heat the RumChata on the stove, since boiling changes the texture of the cream. With espresso, 1 oz stirred into a single shot makes a quick after-dinner drink.

2) Root Beer, Cola and Dr Pepper

Some sodas sit well with the cream. Others turn it grainy within a minute.

Root beer is the most reliable soda partner. RumChata's own recipe calls for 1 part RumChata to 3 parts root beer: pour the soda over ice first, then add the RumChata once the root beer is cold. That recipe names A&W or Dad's, because those brands hold together better in the glass.

Drop in a scoop of vanilla ice cream if you want a float.

Cola and Dr Pepper work for a similar reason, since the caramel and vanilla in both sodas line up with the cinnamon. They're more acidic than root beer, so build them the same way, with soda first and RumChata poured in slowly, and drink them soon after mixing.

3) Cream Soda

Cream soda is the gentlest choice. It has less bite than cola, and its vanilla doubles up with RumChata's, so the highball tastes a lot like cinnamon roll icing.

4) Neat or on the Rocks

Plenty of people drink RumChata straight. Chill the bottle, pour 2 to 3 oz over one large cube in a rocks glass, and grate a little cinnamon on top. A big cube melts slowly, which keeps the last sip from going watery.

RumChata Cocktails Worth Making

Each of these RumChata recipes uses standard bar glassware and one or two bottles that most home bars already have. Specs are in ounces and make one drink.

Rumchata Kahlua Cinnamon Swirl Gift Set by The Liquor Bros

1) RumChata White Russian

The classic White Russian is vodka, coffee liqueur, and cream. RumChata takes the place of the cream and brings cinnamon with it.

Build: 1.5 oz RumChata, 1 oz coffee liqueur, 0.5 oz vodka, 1 oz milk or half-and-half (optional). Glass: rocks. Method: fill the glass with ice, pour everything in, and stir.

Your coffee liqueur sets the tone. Kahlúa is rum-based and sweeter, which pushes the drink toward dessert. Mr Black is drier and tastes closer to cold brew, so the cinnamon comes through more.

Neither one is the better bottle; it depends how sweet you like the drink. Our guide to the best coffee liqueur matches each bottle to the drinks it suits.

We also carry RumChata gift sets, including the RumChata x Kahlúa Cinnamon Swirl set, which pairs the two liqueurs this drink calls for.

2) RumChata Espresso Martini

Build: 1.5 oz vodka, 1.5 oz RumChata, 1 oz fresh espresso, 0.5 oz coffee liqueur (optional). Glass: coupe or martini. Method: shake hard with ice for about 15 seconds and strain.

The hard shake builds the foam on top, and fresh espresso foams better than leftover coffee. A cinnamon-sugar rim or three coffee beans make an easy garnish. For a lighter version, skip the vodka and shake 2 oz RumChata with the espresso and coffee liqueur.

3) Cinnamon Toast Crunch Martini

This is the Cinnamon Toast Crunch shot stretched into a full drink, with vanilla vodka to keep it from going too sweet.

Build: 1.5 oz RumChata, 1 oz cinnamon whiskey, 1 oz vanilla vodka. Glass: martini or coupe, rimmed with cinnamon sugar. Method: shake with ice until the shaker is frosty and strain.

To rim the glass, run a little RumChata around the edge and dip it in a 2:1 mix of sugar and ground cinnamon. Crushed graham crackers work too. It drinks like dessert, so it fits best after dinner.

RumChata Pineapple Cream by The Liquor Bros

4) Chata Colada

This is a piña colada built around RumChata. RumChata Coconut Cream is the natural bottle for it, since the coconut is already in the liqueur.

Build: 1.5 oz RumChata or RumChata Coconut Cream, 1 oz coconut rum, 2 oz pineapple juice. Glass: hurricane or highball. Method: shake with ice and strain over fresh ice, or blend with a cup of ice.

Pineapple juice is acidic, so shake it cold and drink it right away. If you have RumChata Pineapple Cream, use it in place of the juice and most of that acid is gone from the glass.

Malibu Caribbean Rum 750ml by The Liquor Bros

5) RumChata Malibu Lime and Soda

This one picked up a following on TikTok, and it holds up. It's light and fizzy, closer to a highball than a dessert, though it's still sweeter than it looks.

Build: 1.5 oz RumChata, 1 oz Malibu or another coconut rum, 4 oz club soda, 0.25 oz lime juice. Glass: highball. Method: fill the glass with ice, add the coconut rum and RumChata, top with soda, and add the lime last.

Lime is the ingredient most likely to cause trouble, so keep it small and pour it in at the end. Sweetened lime cordial is easier on the cream than fresh juice.

6) RumChata Milkshake

Build: 2 oz RumChata, 2 large scoops vanilla ice cream, a splash of milk. Glass: pint or tall glass. Method: blend until smooth, then top with whipped cream and a pinch of cinnamon.

Chocolate ice cream turns it into something close to a cinnamon mocha. Coconut ice cream pairs well with the Coconut Cream bottle. Add 1 oz coffee liqueur and half a banana and you have a RumChata take on the Dirty Monkey.

7) RumChata Eggnog

RumChata adds cinnamon to store-bought eggnog, which usually leans on nutmeg alone.

Build: 2 oz RumChata, 4 oz eggnog. Glass: rocks or punch cup. Method: stir with ice, or serve both well chilled without it, and grate nutmeg on top.

For a holiday party, a 750 ml bottle of RumChata stirred into a half gallon of eggnog fills about 15 six-ounce cups. If you'd rather spike eggnog with a straight spirit, our spiked eggnog guide covers the ratio and which spirit to pick.

Popular RumChata Shots

Most RumChata shots are equal parts RumChata and one other bottle, shaken with ice and strained. Cold shots taste smoother, so chill the bottles too if you have room.

The Cinnamon Toast Crunch shot is the one people ask for by name. It's equal parts RumChata and Fireball, and it tastes like the milk left at the bottom of a cereal bowl. Jack Daniel's Tennessee Fire works the same way, with a little more whiskey showing through.

For a party round, mix the shots in a pitcher ahead of time and keep it in the fridge. Shake six at a time with ice right before serving so each one comes out cold.

For layered shots, pour the heavier, sweeter liqueur first. Hold a bar spoon upside down just above it and pour the RumChata slowly over the back of the spoon so it settles on top.

RumChata also works in pudding shots. Replace part of the milk in a box of instant vanilla or chocolate pudding with RumChata, whisk until it thickens, portion into small cups, and chill for one to two hours.

RumChata Flavors and What to Make With Each

RumChata flavors split into the ones that stay on shelves all year and the ones that rotate. Here's what each bottle does best:

Flavor

When to find it

Best drinks

Original (Horchata con Ron)

Year-round

Every build above

Limón

Year-round

Lemon-cream drinks, cheesecake-style shots

Peppermint Bark

Holiday season

Peppermint White Russian, holiday shots, a splash in hot coffee

Pumpkin Spice

Fall

Pumpkin pie shot, spiked latte, batch drinks for Thanksgiving

Coconut Cream

Varies

Chata Colada, coconut cream pie shooter

Pineapple Cream

Varies

Whether a seasonal bottle is worth buying depends on how you drink RumChata. If it goes into your coffee most mornings, the Original covers more ground. If you're making a round of drinks for a holiday party, Peppermint Bark does something the Original can't.

Peppermint Bark is the December bottle, and it's a limited release that's usually gone by the new year. Use it in place of the Original in the White Russian above, or shake it 1:1 with vanilla vodka for a holiday shot.

Pumpkin Spice goes into hot coffee with whipped cream on top for a spiked latte. For a pumpkin pie shot, shake it in equal parts with vanilla vodka and serve it in a glass rimmed with graham cracker crumbs.

What Not to Mix With RumChata

Acid is what curdles RumChata. When dairy cream meets something sour, its proteins clump and the drink turns grainy and separates in the glass. The usual causes are citrus juice, cranberry juice, apple juice, tonic water, and sharper sodas like cola or lemon-lime when they sit too long. Coffee, cream soda, and ice cream mix without trouble. Acidic mixers need care.

You can still use a little acid if you handle it carefully:

  • Chill every ingredient before mixing.

  • Add the acidic ingredient last, and keep it small.

  • Shake the drink instead of stirring it.

  • Drink it soon after mixing.

  • Swap the juice for a cream-style flavor, like Pineapple Cream in place of pineapple juice.

Energy drinks clash for different reasons. Their tart, candy-like flavor runs over the cinnamon, and the heavy carbonation thins the cream into foam. Bitter amari do something similar in a full pour, burying the vanilla. A quarter ounce in a coffee drink is fine, while a full ounce is too much.

The same rules hold for every cream liqueur, and our post on Baileys and Irish cream cocktails explains in more detail why acid does this.

Storing RumChata After Opening

RumChata doesn't need to go in the fridge once it's open. The cream is homogenized, and the alcohol keeps it shelf-stable. For the best flavor, finish an open bottle within about six months.

A cold bottle does make shots and neat pours taste smoother, so the fridge is a good home if you have the space. Keep it away from heat, like a hot car or the cabinet over the stove. If a bottle smells sour, pours in thick lumps, or stays separated after a good shake, it's past its best.

Is RumChata Like Baileys?

Both are cream liqueurs, and they swap 1:1 in most coffee drinks and shots. Baileys uses Irish whiskey and leans toward cocoa at 17% ABV, while RumChata's rum base and cinnamon make it a little thinner and spicier. We carry both in our liqueur collection, alongside other cream liqueurs like Buffalo Trace Bourbon Cream.

Which RumChata Drink to Make Tonight

With coffee or root beer in the house, you already have a RumChata drink: pour it over ice and top with the mixer. Add Fireball and you have a Cinnamon Toast Crunch shot. Add coffee liqueur and vodka and you have a White Russian.

Keep citrus and tart juice to a splash, added last. If your bottle is Peppermint Bark, start with the peppermint White Russian, and save Pumpkin Spice for hot coffee or a pumpkin pie shot.
